They call them butts here, but it’s actually a half of a front shoulder. The hind quarter is still called a hamPork butts? We used to call them things HAMS - unless you are talking about something I don't want to try, fried or not...

Sounds like how I run mine.
I have a graph paper that I lay on a table by the machine.
Rev the saw up, watch the tach as I load it down. Every 1,000 rpms I mark the weight down on the graph. (Can do 500 rpms increments too if preferred)
Then release the saw throttle and release the load.
Calculate the numbers, draw the lines in colours, done, there’s the graph on paper.
