I have noticed differences in oils as far as tackiness & definitely flow in both hot & cold conditions but nothing to justify the insane prices of some types of b/c oil. Itasca was the only kind I have had problem with being too thick in cold weather. I would rather cut in temps below 32 than any other temp range.I can't imagine one bar oil being better than the next, at least not enough to make me want to pay 2-4 times the price of the cheap stuff. I would buy the cheapest stuff I can find. I know thinner oil is better in the winter (especially up north), but if it is that cold (to make a difference in bar oil), you aren't going to find me cutting wood, unless it is a charity cut; and I usually get stuck behind a splitter at those.
