Put this 16lb prime brisket on the smoker last night about 6p.
Here's what it looked like this morning at 9a. Still has a few hours to go.
Did something different.
No rub, just S&P and smoke.
We'll see?

Whole brisket here is now $6.89 per pound.

I don't understand the huge differences in pricing, by cut and region.
Where I am, choice sirloin steaks are cheaper than 80/20 ground beef.
Prime beef is only slightly higher than Choice.
I'll look at Prime brisket the next time I'm at Sam's. The supply of prime steaks has been hit and miss but they always have a case full of brisket, both flats and packers.
Whole choice primals are back in the meat cases as well. They're pricey, whole ribeye primals are $13+lb but are available. The last one I bought last year was $8+lb.

Anyone here recommend a vinegar based BBQ sauce? Had some on pulled pork in North Carolina years ago. Didn't look like anything was on it but the flavor was out of this world. Would like to try and recreate that taste.
@Mastermind has a damn good spicy vinegar sauce that he won’t share.
Don’t rent pigs either, sumbitch is kinda stingy
