Charlie, I'm pretty sure that on the 7th day, when God rested, he ate Bacon. And I doubt that the bacon he had was any better than what you're making.

I always have a few cans in the pantry. My wife hides them so no one will see them. I keep a few cans in the shop as well.
How were they smoked?

15 minutes smoke at the last 10 minutes with the 3 lb. sausage chub. ( with pecan and apple )

Bless you my friend. As I love my bacon. We have been smoking bacon for since before I was born in the old 100 year old meat house. My old man was hard on me back in the early 60's .

I hope so too Nic! It's been going really well so far. Had two great guys out there today and they finished bricking up the firebox. It's hell not being able to be out there myself, but I'm really blessed to be getting such great help.

Also, my dad got back into town today. He's not super familiar with the new syrup setup, but he'll have to learn. I'm hoping to get tapped by the first of March. Maybe a few days earlier. Then we should have some fresh syrup within a week. Glad to hear that you haven't quite run out yet.

Looks good Ryan. I'm sure it is tough sitting and watching but you need to let your ankle heal. Wish I had more time to come help.

Lunch time fresh pork loin seasoned and fried in olive oil fresh sourdough bread a chedder simple takes like 10 minutes deeliciuos.

Dinner lol smoked pork ribs with smoked baked beans and smoked mac and cheese 8.00 dang good.

We had to run errands again tonight so we stopped at a little shop that does hoagies. I had a half hoagie and bowl of chili.
