Tonight I am making a chicken and rice mix for dinner and lunch next couple days. Just jasmine rice lime juice and zest with scallions and carrots minced, (with thyme and a tiny bit of cilantro while the rice cooks). I typically just pan fry the chicken and then cut it really small but tonight I'm trying to bake it and then shred it up.
I made a few more pickles today. Six quarts of B&B and ten 1/2 pints of sweet relish.

We also had a Poblano and rice casserole but I didn't care for it.

Charlie, I'm glad to hear you were able to salvage some of your corn.Hmm, corn, We started pulling corn today, It finally got ready. I forgot the pictures, but will try to get some. Pulled about 18 dozen ears today. ( I love sweet corn! )
