Tbh the wifi connectivity and two meat probes that all can be monitored from the phone make a fella look like a good cook.

Probably doesn't matter really, I can't even get this new phone to make phone calls lol.

I would like to do ribs, but the wife don’t like meat with bones in it. Thinking boneless pork chops or a pork tenderloin. The wife and I are huge favorites of “burnt ends” from the point of a brisket.

The other item I want to try is a rack of smoked chicken breast.

I’ll chime in on the festivities here shortly fellas...modifying a new 22.5” Weber Smokey Mountain charcoal smoker I won the other day in a raffle/fundraiser for a fellow Jarhead’s wife who’s sick, dealing with some health issues. Just finished the 3” swivel castor add (4” overall total height increase), adding two handles exactly left and right of the middle cylinder in btwn the middle and upper rack bolt heads you see on the outside, adding a Cajun Bandit stainless hinge kit to the lid, Cajun Bandit cylinder lock kit, swap out that bullshitt Weber thermometer for either a Tel-Tru or River Country, then gasket the access door with LavaLock 1/2” x 1/8” black gasket.

Overall height to the dome top now is 50”, 52 1/2” to the top of the handle...suits my 6’3” ass just right.

Emu legs missing a golden business opportunity there dot dot dot
i *f-worded one time .in the 1980s i put a 6 foot fence up around for 13 emus. in the spring they all died in 5 days. it was a weed that was dormant in the winter. son a beaches the longer you live the less you know. *f-word them emus .they was kind a lot of money then but i am still here them emus can eat *s-word.

Brisket oh yes! Pick some ribs up and on the way home grab some chicken nuggets from McDonald's for the wife maybe you can sway her into bone in lol.20190428_212519.jpg

I run a rec tec bull been super happy with it.
How long have you had the Rec Tec and what are your biggest likes and Dislikes? I'm debating between Rec-Tec, Green Mountain, Yoder and the newer Traegers. No doubt that there are several other good options, but those are what I have decent dealer support for locally...

Had mine idk a year or so now still cook on it several days a week. Pid controller keeping the temp even plus stainless body and grates side shelf front shelf etc.. I want something that lasts. Having that huge rear mounted hopper is also wonderful!

Why the pans under the birds? I always try to keep my moisture at the bottom so the air is moist. My meat gets mushy if it's swimming.

I use a brinkman water smoker. I’d love to have a nice big offset, maybe someday. I can produce excellent results with what I have though. Only challenge is real long burns.

Primarily use apple for smoke, unless it’s a brisket, then I like oak.
