I will probably do the install myself. I would like to just hire someone, but it is hard to find quality contractors that have any time available for a project. The only guys who do work that I respect are too busy.

That's why my family is going to start IA ing instead of having deal with bulls

You will still need a bull for cleanup duty. AI is only about 50% - 60%, the best I have heard of is around 68%.

We got a dusting of snow overnight.
Got the beef through stage one, and he's doing a bit of aging.... sposta be 36° today and 45° tomorrow.
What's the consensus here for hanging beef??? what's the max temp y'all would allow?
Last time we did a cow it was in the single digits, and the meat was pretty dang tough.....but it was also a really lean heifer vs this fat bull, ( he would have been 3 yr on Thanksgiving day).

We always used 40* as max temp for hanging.

Bryan, you might try loosening the fuel cap on that Craftsman to see if that changes anything.

Everybody has their own point of view on meat hanging. We went a week on beef. Wanted 35-40, didn't always get it. Multiple ac's in a insulated building gave us decent control.

Ya know, I knew I'd seen a picture of saws on a wall on this forum somewhere and couldn't for the life of me, remember where and couldn't find it after looking for days. I even created a thread asking for "saw rack/shelves" ideas, hoping whoever put that picture up, would chime in. Got some good solutions in that thread, but this is what I was after.

Well, this was the picture I was thinking of. You must've posted this picture, or one showing this same saw holding solution somewhere in this thread, because I remember it. Of course, I couldn't remember it well enough to duplicate it, but I remembered it enough to know it was kinda what I was after, being in a pole barn type setup.

I'm building a pole barn type shop, sometime in the near future and wanted to use this idea, since it seems to keep saws organized and out of the way and not sticking out into the working area of a shop, like shelves do, since I will be limited on space.

So thanks for posting this again, even though ya didn't know I was looking for it. Lol

Put a tarp over it to keep it from freezing.. Should make it through a 45 degree day if shaded no problem..
Age it as long as you can. DO NOT pull the inner tenderloins till at least 3 days. Longer if ya can. A week would be great if the temps will allow, but the first 50 degree day, you'll want to at least make primal cuts and refrigerate.
Judging by the weather guesser, you'll have to cut him up Monday..
