Currently out of lard, so she used olive oil.....sadly.
Waiting for cooler weather to start processing hogs......en masse.
Canola or peanut would be good for frying. They don't have an aftertaste unless old or dirty.

We've had good results frying fish with peanut oil and butter mixture, close to a 50/50 mixture when pan frying..

One of the friends does homemade donuts in lard. Those are real tasty, especially when they still have that slight crunch when extremely fresh. The crunch starts going away rather quickly, maybe 8 hrs or so, still tasty butttttttt.

Me thinks the only reason they last more than 8 minutes is they have gotten to doing a triple batch as long as the stuffs is out.
That's about 12 dozen with their recipe.
