Currently out of lard, so she used olive oil.....sadly.
Waiting for cooler weather to start processing hogs......en masse.
Canola or peanut would be good for frying. They don't have an aftertaste unless old or dirty.

We've had good results frying fish with peanut oil and butter mixture, close to a 50/50 mixture when pan frying..

One of the friends does homemade donuts in lard. Those are real tasty, especially when they still have that slight crunch when extremely fresh. The crunch starts going away rather quickly, maybe 8 hrs or so, still tasty butttttttt.

Donuts don't last 8 hrs at my house lucky if it's 8 minutes 😂
