Our hogs are very fat and we leave a lot of it on the cuts.
I think most of the problem is in the cooking "method" employed by the cook....but that a delicate topic....
Going to try some stuff an see if I can chew lunch.

I don’t let my wife cook any cuts that matter.

If it don’t involve browning hamburger or flour, she’s out of her element..
I believe that's what I'm going to have to do as well.

Meat cooking just don't resonate with many ladies..... I just hate to go through all the work and expense of raising/processing our own pork, only to end up eating dry leather.

All my pork cuts go to the grill or the smoker but you can ruin em there too. I f you are getting dry & tough it always goes back to time & temperature. Too much of either will ruin em. Not just the ladies either. Know lots of guys can't cook for nothin. Seems like you get it or you don't.

I usually choke it down since I don‘t want to be on some kind of Mediterranean diet or whatever the current rage diet is.

If I do cook it pork roasts, sealed up & low/slow seems to be best. Apricot marmalade seems to help seal some moisture in too.

My wife won‘t eat yardbird unless it is saharan dry, thats the only thing I won’t choke down. If I want yardbird, I cook it.

my 50hp yanmar i loaded the rear tires with fluid, then added about 13-1400 lbs of steel wheel weights inside the rears. that made all the difference. very stable and helped with traction a ton. the wheel weights have been the best thing ive done. they actually were old spoke wheel weights for old tractors. 22" od fit perfect inside my 24" industrial wheels.
Here are the wheel weights I’ve got on mine. 4 each side. 1@176lbs 3@144lbs.

Got a little bit moved in today. Tomorrow’s goal is to get just enough in so we can start sleeping at home again. Don’t get me wrong, I love my son and his wife dearly. But it’s time that both our lives return to normal.

What a change a few hours made weather-wise. Temp only dropped 3 degrees,, but its been rather windy 15-40mph since mid afternoon. Oh and there's a strong inch or more of the white not so fluffy stuff.
And it's not officially winter yet for another couple of weeks.
