I'm certainly no expert but I think I've read somewhere that if naturally dried about 15% or a little higher is all they'll get to. Somewhere around the 10% Mark is the ideal spot.
Then again, does the 10% goal even matter that much? I doubt kilns were even thought of 100-200 years ago and look at the quality of furniture made back then.

You might get under 10 in southern AZ. I read this on an Iowa State University article:
- Timber can be dried to any desired low-moisture content by conventional or solar kiln drying, but in air drying, moisture contents of less than 18% are difficult to attain for most locations.
Good point on furniture from 100-200 years ago.
