I’m interested in the loins, legs, and ground lamb for making that Greek stuff you eat with cucumber sauce in pita bread.. not sure how to spell it, but a lamb/beef mix.I buy my nieces 4-H lambs 2-3 depending on the year, give each one of the kids 1/2 lamb for Christmas. I send them to the locker to get butchered. $100 for processing. We get chops, rolled leg of lamb, ground lamb, shanks, shoulder roasts, ribs, liver & heart. My folks neighbors had their own butcher house when I was a kid & we would go down & process hogs, sheep & cattle with them but that’s been 35 years ago.
