It’s worth noting that the 45% alloy does have a smaller melting range than 15%.The stuff Dave used in the video is actually silver solder, but they call it silver brazing rod also. It’s quite a bit more expensive but it works well with stainless or when using dissimilar metals. What Nick pictured is common flux coated brazing rod. It’s what I use most of the time, unless I’m working on stainless. The bronze rod actually allows you to fill slightly larger gaps if you can control your heat
Once you’ve gotten a good base coat of 45% on mild or stainless steel, you can switch to 15% and fill like you described.
The wider melting range and some good heat control make things possible that most wouldn’t attempt.
