Tried smoking a couple chicken quarters from food lion yesterday. I think they were as old as I am, and tough as leather. didn't turn out too bad, they were edible.
I've gotten to the point that I almost always brine chicken before grilling of smoking.

Good idea Steve, I put the other pieces in the brine bucket for 24+ hours, got them ready for some rub, and then into the smoker. we liked them much better this way. even mama commented on them!

Finally got the last piece of BBB sliced up, and threw some venison burgers on the little grill.

Thanks sounds easy enough I always have a hot or miss with brisket
I was the same way with a brisket till i got a traeger pellet smoker i have never cooked such good bbq i have wireless thermometor its plus or minus 10 degrees on the cook.i was old school for so long now after having a pellet smoker i will never look back.

I've been looking at those. A old hillbilly buddy of mine has a smoker made from an old commercial freezer and I got spoiled with that. I also have a wireless thermometer and that has been so useful.

Im telling you bro go pellet.im old school i had brinkmans customs verticals voth electric and gas with needle valves.it was hard to persude me but ince i did it was the best thing i did.your temp is so accurate.the weather. Hot cold humidity wind affects that fire.i can prep my meat night before get up say 4 5 a.m.put it on till it hits my desired temp set alarm crawl back in bed mow grass dribk beer then when alarm goes off i go get meat wrap it in foil reset alarm. For the final temp im done.its like a convection oven there is no direct heat.when tem dtops auger pushes more pellets in fire pot

My very first cook with a boston butt with the same rub ive made for years wife said this is best pulled pork you ever cooked.

And my neighbor has a wood pellet its a Green Mountain brand? Davey Crockett. There nice but not quite ready to make that purchase yet

Oh and one important thing when looking to make the Hillbilly Deluxe it has to have the fiber rock insulation not the polyurethane styrofoam crap in it otherwise it'll poison your food
