Have you smoked your Pork butt yet?

Actually we decided yesterday that we liked the CB so much that I deboned it and put in in the cure for a couple weeks so I can make some more bacon with it. This stuff is good for all three meals IMO. Might try another one for pulled pork when the daughter gets home from school.

Thanks to you guys!! ( Yet another addition to the cookers. ) I made the 30 mile drive, to the big city Home Depot Tuesday to get this. ( 30 miles one way ) A brand new Weber Smokey Joe, and a new Weber compact chimney starter. Thought if I have to cook again I might as well enjoy it! Been over 35 years since I cooked on charcoal, forgot how good it tastes. Cooked 3 baked potatoes and 5 venison burgers. I was happy, and mama was really happy that she didn't have to cook supper! They were damn good!

Y'all going to break me!! :D

Thanks to you guys!! ( Yet another addition to the cookers. ) I made the 30 mile drive, to the big city Home Depot Tuesday to get this. It's fun, ain't it?

Since I spend so much time on the porches, I might as well enjoy it. ( and the food!) The two smokers are on the back porch and the Smokey Joe is on the front porch, and both are under roof.

Thanks Jason, I did a lot of reading on it before I bought it. Seems everybody loves those little Smokey Joe's, Sort of like a cult following. I think I am really going to like it, burgers taste much better cooked over coal. Mama even thinks they were much better also. Might try some wings on it tomorrow.

These went on the smoker a couple of hours ago. 15 lbs of Corned Beef Brisket points.
They'll smoke till they hit 160*, six or eight hours, then I'll steam them until they hit 200*, about eight or ten hours. The last batch I did were outstanding. I hope these turn out as good.

More pics Monday. No skimping here, all 1/4" on 1/2" custom grates, for comp grill marks, 3 racks in the cabinet and SS pan in the bottom. This is the second one I have built for the same guy.
Is it going to a private party, or is it going to be at a local VFW?
If a local VFW, I'd like to see it in person. Looks top notch.

It will stay at Yardbirds Greenhouse and landscape in Montgomery City. They will take it to competitions locally.
You should definetly come and check it out. Lunch Monday!

Here's the finished product, sliced and ready to be vacuum packed.
10 lbs of peppery goodness. My wife likes the lean stuff but the fattier stuff is more better. As I was slicing the pile on the left, it was actually melting.
