Rubbed some wings down to try on the little Smoky Joe Saturday. We loved them, I will be doing more of these.

Here's the finished product, sliced and ready to be vacuum packed.
10 lbs of peppery goodness. My wife likes the lean stuff but the fattier stuff is more better. As I was slicing the pile on the left, it was actually melting.

We can work out a deal on some Pastrami, the slicer, not so much.
I found the slicer on close out at a restaurant supply. It would cost me a lot more to replace it. I wanted a 12" but the size and weight were a bit much for my kitchen.

Behind the power curve...didn't get a chance yesterday to do the Traeger deal with this migraine been pack-muling my ass for the last couple of days. Here's the legs and Brats. It ain't much to offer, and the migraine ain't let up yet. It was a MF'r today at work.

I'm not a big fan of chicken legs -- but I would give those a run without hesitation. The Brats look marvelous. Try wrapping them in bacon next time and cooking them slow on the smoker -- it will make your eyes roll back in your head my friend. Hope and pray the migraine has gone by now. Keep those "pics and demo's coming!"

Finally a few minutes to get the cured pork butt in the smoker. It is making some super buckboard bacon. BBB! Want to get slicing pics, But it not lasting here long enough! One whole piece went to my brother, and we are eating the rest to fast to get pics.

Tried smoking a couple chicken quarters from food lion yesterday. I think they were as old as I am, and tough as leather. didn't turn out too bad, they were edible.
