Rack needs some more patina, need to smoke some more. I got a new smoker for Christmas and haven't used it yet, old one gave up the ghost for the most part but had a nice layer of smokey goodness on the racks. Need to get that started, maybe a roast since I have several I need to use.
Same situation here, new smoker at Thanksgiving time....the old one literally fell apart from experience

Morning all, 23° and not supposed to get above freezing today. Wind has been blowing all night as well. Got to be in Monett before 8 to do a little dealing on some things. Then need to prep some food for tomorrow, dry brine steaks overnight and maybe put together some mac and cheese.

Planning on goat hunting today & tomorrow with my son, not sure they will be out moving around willingly, looks like some walking is in my future…

What type of goats? My first thoughts were that would be easy here. Just go a few houses down and roll down the window. Don't even have to get out of the car. Might upset the neighbors a bit though.

Called the processor yesterday evening to find out hanging weight on steer I took over Thursday night. Went 662.5 which I though respectable for a 23 month grass fed angus cross.
We have no way to weigh these whole, but I'm guessing 175 each on the four regular ones and probably 250 on that mega fat one.....that pig will probably yield 7 to 10 gallons of rendered lard.... I do believe it's the fatest one we've ever done.

Deer, these are whitetail deer.

Yes, feral, over populated & over regulated.

Although nature is doing a good job of thinning the herd with blue tongue/chronic wasting.

Gonna break in Sam's new butcher block he made for Christmas.
30" x 48" x 2.5" thick ash.

Wild, state “owned” goats, BUT the state doesn’t “own” them after they damage a vehicle.
Our damage to row crop or hay fields.

BUT if you try to fence your property to keep them out, the state says “NO” unless you first ensure that all “their” livestock is off of your property.

Sorry, I was thinking literal goats as in terms of feral pigs. I actually looked up the Iowa hunting regs to see what was in season and noticed the antlerless portion of late season. With the way some people just release animals now days it would not surprise me for you to have to hunt wild goats.

We can only use shotguns, straight wall rifles .35-.500 with a muzzle energy of 500ft# for fall seasons. First 3 weeks of Dec.

But late season antler less is .223 up to .500.

We don’t have many feral species around here. They claim there are a few hogs over in extreme SW IA by the Missouri River.

They have been seeing a couple of bull elk about 15 miles SE of me.
