So it’s a mixture of ground pork, and ground ham...??That is where it gets tricky. The old butcher in town knew exactly what you wanted when you ordered ham loaf. He retired and I have to train the butcher in the next town about 10 miles down the road.
Fresh ham today was raw pork shoulder or pork butt. For cured ham, The butcher today just used 4 pounds of cured deli ham, just like you would make a sandwich with.
To get actual raw ham, as in the pigs arse, you would have to order a raw ham a week or 2 in advance. But raw pork butt/shoulder is just fine.

Seems “tart” is just a french term for pie..
Unfortunately, I am my own butcher..That recipe is out of our church recipe book. The lady that gave that recipe is in her 80s now. I wish she would have defined the 2 different hams better but she didn’t. My whole family loves the stuff. I think most of them would be happy with ham loaf and nothing else. There are plenty of recipes online but they vary little. Your butcher may know exactly what you want if you ask him.
I like pie.
