Might I suggest a walk in cooler that can maintain 34-35 degrees with ease?
Another client of Shalie's business has an HVAC business. He recently changed out walk in cooler for the KFC in Derby KS. We may be getting a 10x12 for a nominal sum, that's older but in perfect condition...

Morning midlanders!

I got Echo 590 #1 running. After a short blast to clear out the assembly lube we have 120. A marginal improvement over the original 110. [emoji57]

This is in a really shabby cylinder.

Not snagged the extra ring.[emoji1696]

Give it a tank of fast idle and check comp again.

I am looking forward to building a butcher area in the building that Shalie and I are going to build by our house... I figure a darn good grinder, a used meat bandsaw, and a slicer, and we're in business, unless we do it traditionally with knives...

Don't forget lots of work space. Stainless tables or butcher block tops. Need to consider packaging too.
Not cheap to get into but mostly up front cost for equipment.
