So what is a good chain to use for milling? I have learned that full chisel chain is not ideal for the type of cut in milling, regardless of how sharp it is...

I've heard of something called "ripping" chain. How do I know if a chain is good for milling?

Ripping chain is essentially semi-chisel with a 10° top plate angle. Some can be more elaborate like granbergs.
