Outstanding product.. quite salty. Finally, a bacon with enough salt. I swear all the locker plants are trying to reduce salt usage anymore.
I need to get a slicer though. Cutting it with a knife is slow.

And yes, gotta have the right animal to get enough fat. And the fat is fantastic.

I bought a commercial Hobart slicer to do ours with.
Bring it by if you get in the area. We can knock it out in short order.
It needs to be frozen, and then let it thaw just enough to be able to cut it. It is too soft is all the way thawed.

We hit the road at about 6:30 this morning.
Got another 8 hours to go today, and about 10 hours tomorrow.
It will be good to get back home.

Cow belly, I think, like pork bacon on a pig. Never had it myself

Wel just got back home this evening from our adventure. Over 4500 miles 6 states and 7 days. Seen the Grand Canyon, explored Arizona, and explored Las Vegas some. Only found 2 decent saws at a pawn shop in Phoenix. A 201t stihl for $250 and a husky 562 used for $800. Thoroughly disappointed with the pawn shops. Was a great trip but soo glad to be in my own bed!
