I bought a commercial Hobart slicer to do ours with.Outstanding product.. quite salty. Finally, a bacon with enough salt. I swear all the locker plants are trying to reduce salt usage anymore.
I need to get a slicer though. Cutting it with a knife is slow.
And yes, gotta have the right animal to get enough fat. And the fat is fantastic.
Bring it by if you get in the area. We can knock it out in short order.
It needs to be frozen, and then let it thaw just enough to be able to cut it. It is too soft is all the way thawed.
