After two weeks curing with the T. Q. Time to get ready to do a smoke on the side meat. Did a small test today to check for salt. Will pepper the sides now and dry them in the fridge to get ready for the smoker. The fresh tasted awesome!! It will take a couple more weeks yet! I can't wait!
Damn that looks good!

The wind laid enough today to get a couple hours of smoke on the sides. Loaded the smoker tube with the pitmasters pellets. A mix of hickory maple and cherry. Will let them rest in the fridge again tonight and put some more smoke on them again tomorrow. I am really liking this tube smoker for cold smoking, the 6" tube lasted about 3 hours at 36 degrees ambient temperature.

Highly impressed fellas with the fit and finish of the Traeger Pro 34. Looks like QC is spot on with these bad boys. Everything fit perfect...you'd think Traeger is in the piano business. It's as solid as a tank. The front folding shelf is an option as well the bottom shelf in btwn the legs. Dual meat probes one standard that go through a heavy rubber self-sealing balloon valve in the side by the pellet hopper.

This thing will hold some groceries...884 sq inches of total rack surface. I'll probably wait til tomorrow to do the seasoning of it. If it smokes and grills as good as it looks, fit and finish-wise, it's gonna be a no-brainer 10 outta 10.

Doing the burn-in seasoning. Says to set it on high, last temp setting before that is 375 degs. Think it's supposed to hit around 450 degs on high, let it roll for 45 mins. Sitting at 360 and climbing. That damn Rec Tec Ultimate Blend smells fine. I bought three different 40lb bags...Rec Tec Ultimate Blend, Louisiana Grills Competition Blend, and CookinPellets Premium Mix. I simply flipped a coin as to which mix I'd season it with. Rec Tec smells damn fine!!

Looks impressive Jason. Looking forward to a report on how you like it, after you've had a chance to use it. I really like the drip shield. Great for keeping everything clean.
Built like a damn tank Steve...I'm impressed with it. And I ain't easily impressed. Sitting at 420 degs now. Looks like it's gonna settle at 420...may've been wrong on that 450 deg deal. Even the seasoning break-in smells fine!

It is not an entry level unit...gotta dig deep in that wallet unfortunately. I take my grillin' and smokin' seriously. Plenty of units out there by different mfg's for a heap less, trust me. All depends on where you wanna take your grillin' and smokin' level to my friend.

It is not an entry level unit...gotta dig deep in that wallet unfortunately. I take my grillin' and smokin' seriously. Plenty of units out there by different mfg's for a heap less, trust me. All depends on where you wanna take your grillin' and smokin' level to my friend.
I just want to mess around on the weekends. I'm usually up to my nuts in other stuff so probably won't get real serious.

I showed my wife the pics. She thinks I need one and Valentine's Day is next week. She bought me a gun today but a Traeger would be nice as well......Good wife!

Temp display showed 430 degs a minute ago, but now reads a steady 425...I think with this Advance Logic Controller it has a +/- 15 degs to maintain temp set point. I think it'll be spot on temp-wise here in mid-Ga...don't go through that crazy ass cold like some of you folks deal with in the winter. I been in flip flops and shorts since sun up this morning, if that tells ya anything. He's a steady 425 on the nose.

@beaglebriar...get ready to drop $1K if you want the Traeger Pro 34. I had to pay extra for the front collapsible shelf and the bottom shelf...about $120 for both.

Mind you fellas as well, as far as high temp goes, some pellets by mfg will get the Traeger higher than others. This is just my burn-in seasoning to begin with, as far as high temp goes. I'll sample some of the other pellets I've got...I like to sear a steak after it's cooked mid-heat, and crank it slam to 500 degs within mins.
