Happy Veterans Day to all.

I'll say this much...the folks who've never served...you did serve when it came down to it, in a role that was and is today every bit as important. The support you all gave us boots on the ground. I salute you all for the support back home.

2:1 sugar/salt. Crushed juniper berries, whole black pepper and fresh thyme and sage

Apple/Almond/Cherry wood
No juniper berries available so I used rosemary and lemon juice. I added some honey to the brine as well.

I just went out and snuck a sample. Absolutely unbelievable!

Next time I smoke a chicken, turkey, or any game bird, I will use this exact brine again.

No pics now but some of you will be jealous of what I'm bringing home tomorrow. fresh cut cherry I must have cut 15 of them down from 8 to 18 inch at the base. no punk, rot, or shrooms. I'm going to bring what I can fit in a Tahoe and hopefully a truck too. I have a few pics tomorrow god j love lot clear jobs

Had a galfriend stop by fellas...things happen. Here's what's left of the Boston Butt...still got half of it so that's a good thing, ain't it? She earned her sliced half...yeh!!

What cha got mixed up for seasoning on that slab of meat. looks about how I do pork shoulder
@bikemike...here's the concoction I used...only thing I added was about a cup of brown sugar to the equation. Rubbed the seasoning in real good and let it sit at room temperature for about 3 hrs before hitting the grill. Turned out excellent.

Also, about every 45 mins or so, open the grill real quick and I'll pump down the butt with a mixture of apple juice, water and either white distilled vinegar or apple cider vinegar in a spray bottle. Either vinegar is fine.

This is an excellent rub by itself as well. Sometimes I'll add the Garlic Pepper from the previous pic with it. Makes an excellent rub for shoulders, picnic hams, or butts.
