( Andouille sausage,) More info. please.
Andouille is a sausage that originated in Louisiana. It's generally a bit spicy, heavily smoked and very tasty. My wife makes a sausage dressing using Andouille that's excellent.

My youngest son has a Smoke Hollow 44". He likes it a lot but did the same mod to the door that you're talking about. He researches stuff to death and that's what he ended up with. He's in The AF, stationed at Hurlburt. He uses his nearly every weekend.
I've had two cabinet smokers from from a little company in the Ozarks, that's no longer in business. My last one finally rusted out, after 15 years. I'm going to buy a Weston. I've had excellent results with the cabinet smokers. The only thing I change is the thermometer in the door. I replace the cheap ones with a good quality unit. Once I get the cabinet where I want it, there's nothing to do but wait.
Absolutely agree Steve with the door thermometer getting swapped first thing, for a decent one. Almost all reviews I've read, regardless of smoker mfg, everyone says the cheap thermometers are way off.

There are two versions of the Smoke Hollow 44" gas smoker with glass door available...one is model number 44241GW, the other is model PS4415. Both units sport two 11K BTU stainless burners. The PS4415 is the newer version of the two.

The 44241GW has two latches on the main door, one latch for the wood chip/water pan access at the bottom, and don't have to open the main cabinet.

The PS4415 has one latch for the main door, and no latches on the bottom. This revamped, newer version has two pull out wood chip trays that sit side by side over the two burners. To access the water pan you have to open the main door for that. I was concerned about the single latch on the newer version and read reviews where others were worried as well, but all say it seals fine (obviously the older model with two latches certainly seems a better idea there, 'the more latch the merrier theory' but I intend to immediately seal the door edges with a Nomex seal application, regardless of which model I go with). I'm leaning a little more to the newer version as it's certainly cheaper through Sam's Club than I can get either version elsewhere.

There is also a non-glass door 44" smoker option as well...model number 44241G2. It runs the same price as what the Sam's Club version is with the glass...might as well get the newer glass door version.

Not sure Ross, as the only other smokers I've ever had, had solid doors. No doubt there'd be a little glass maintenance involved. The trick from what I understand is to take wet paper towels and dip into the fine, white ash in the wood chip holders afterwards when things cool, and clean the glass that way. I've read it a few times about this approach, say it cleans the tempered glass like new.

The trick from what I understand is to take wet paper towels and dip into the fine, white ash in the wood chip holders afterwards when things cool, and clean the glass that way. I've read it a few times about this approach, say it cleans the tempered glass like new.


What may work (it's what I do for my grate thermometers in my smoker) is spray PAM on the door before every cooking session and then wipe it off when you are finished.

I've been eyeballing the ThermoPro TP20 thermometer with two probes. The Maverick given you any problems yet? Both units are the same price on Amazon.

That's exactly the same one that I use. I'm very happy with it

I use a wet towel on my fireplace door, when it's smoking hot. Works well.
If my wife cleans it cold, she uses oven cleaner. Just sprays it on, waits a few minutes and wipes it clean.
I've never tried the ash trick but I will. Sounds like it's a lot less trouble than either method we use.

The Maverick has given me absolutely no problems at all. Couldn't be happier with it, and would very much recommend it to a friend. One probe for cooking grate and one for food. When I used it in my big wood smoker, I used it to gauge temp differences from side to side as well. I reversed the airflow on the smoker and it came down to a temp difference of 5 degrees from one side to the other. Wood is fun, but LP is so much easier.

I went online earlier today and looked at the Smoke Hollow website. That's the company, in Neosho Mo, that made the cabinet smokers I've always used. They changed the name to Smoke Hollow in 2005 when they incorporated as Outdoor Leisure Products.
I've decided to can the Weston and get a Smoke Hollow PS4415.
If these units are half as good as the old ones, they'll be great.
I went on ahead and pulled the trigger...I ordered the older version, model 44241GW vice the newer model PS4415 for two reasons:
1) two cabinet door latches about 6" from the top and bottom, vice one centered half-way down the door length on the newer model. I'm thinking the more latches the merrier on this decision.
2) The smoking bins on the older model will not only hold chips, but chunks as well. The newer model, although nifty in its approach for simple pull out chip bins, you can only get chips in them, they're not very deep at all and they have a hinged cover on them. Bad thing is, they hinge on the front of the chip bin, not from the rear end away from the handle, requiring the bin to be physically removed to add. Why not hinge the damn thing from the rear so you can pull it out about halfway, sling chips in, and slide it right back in?? Duh!!

The older model, come to find out, has two 12K BTU burners vice the newer model having twin 11K BTU burners. Not that big of a deal though when it comes down to it. Most folks smoke with one burner only, when the smoke stops on that one, fire up the other one, and kill the dead one until you reload it, having it ready for the next heat/burner swap. You can also access the older version water pan through the bottom latched door, instead of the newer one, the water pan is accessed by opening the grocery door.

I didn't order through Sam's, I ordered through Home Depot. With my 10% mil discount, that got bumped up to 15% because I got the run around on the 1-800 through a cust svc rep who had zero idea or clue as to what she was telling me on the phone, until I got her supervisor on the phone. The 15% off saved me $51 and some change. Free ship, will be on my property NLT 25 Nov.

The water pan access is no big deal for me. If I add water, I do it with a watering can and it only takes a few seconds. The wood drawer is a bigger issue but not a deal breaker. I'll make it work. I like the idea of two wood drawers. It sure makes keeping smoke in the cabinet easier.
With your new IR cooker and smoker, you'll be eating like a King for a while.
I'm jealous.

The water pan access is no big deal for me. If I add water, I do it with a watering can and it only takes a few seconds. The wood drawer is a bigger issue but not a deal breaker. I'll make it work. I like the idea of two wood drawers. It sure makes keeping smoke in the cabinet easier.
With your new IR cooker and smoker, you'll be eating like a King for a while.

I used to use the same theory as far as a watering can goes, and you'll have the door open only momentarily like you said.

I'm excited about getting this thing here. It's a big damn smoker, I think a little over 1500 sq inches if I recall of total rack space...better have some hungry mouths if it's loaded to the gills. I think at the price point, it's one of those no-brainer deals Steve. I'll have to Nomex the chip/water pan/burner access door as well on top of the smoking chamber door, but no biggie.

I'm really looking forward to loading it full of 1/2 chickens for the first smokin'.

With the jingle I saved going the Home Depot route, it's like I'm getting the ThermoPro TP20 dual probe thermometer as a kicker for free...can't argue with that for damn sure.
