Back ribs have been stupid expensive around me all year ($5-$8 lb) and I refused to pay that much. I found these for $3.49/lb, last week.

Smoking a huge tri tip today like a brisket. Never done it before but plan on making Texas Twinkie’s tomorrow for football with the leftovers. This pic was right before I wrapped it in foil at 155° I.t. With a few pads of butter. Currently at 192° I.t. Heading for 203°.

Also, I trimmed all the surface fat and silver skin off before, interested to see the final product.

Holy cow haha, This almost 4 pound tri tip smoked like a brisket turned out incredibly awesome. Highly recommend trying this!
