A load of beef snack sticks, as they went on the smoker, from earlier today.

Six hours later, ready to go in the ice bath, then dry a bit.

This was my first attempt at making any kind of cured & Smoked sausage.
I was pleased that I got the cases properly filled and only had one blow out.

Not sure yet.
When I first tasted them, they had a strong Pepperoni flavor, which I didn't care for. As they sit on a rack in the fridge, the flavor seems to be changing and mellowing. We'll see where they end up.

There are plenty of mixes out there so I'm pretty sure I'll be able to find a few I like.

Well....after sitting on a rack in the fridge, the flavor mellowed nicely. The strong Pepperoni taste is gone and there's just a mild pleasant sausage flavor, with a kick at the end.
The cases turned out perfect. They don't peel off of the sausage and have a distinctive snap, when you bite into them.
I'm very pleased.

you know i am not a short rib fan. yeah i know but short ribs dont do it for me. but i am the same guy that smashed the *f-word out of my left thumb a few months ago. my own thumb. grilled some prime rib tonight. on the jim bowie.
