This was my first attempt at making any kind of cured & Smoked sausage.
I was pleased that I got the cases properly filled and only had one blow out.
Looks good from here.

I need to drag out the smoker.....
Well....after sitting on a rack in the fridge, the flavor mellowed nicely. The strong Pepperoni taste is gone and there's just a mild pleasant sausage flavor, with a kick at the end.Looks good from here.
