Looks good. What temp, how long?
7 pound brisket from my half cow
250 for 9 hours plus a 2 hour rest

the bark never set up this time so I didn’t wrap it till it went in the cooler. Has a more smoke flavor than I’m use to but I’ve never not wrapped one. Very tender and still juicy.

Don’t let the looks fool you. I am just a guy who bought a Pitboss did lots of video watching and roll with the punches. I was honestly surprised how well it turned out being no wrapped. With that said anytime you want to come down just let me know and I’ll plan something to cook. I always enjoy cooking for friends.
