Cajun chicken with habanero cheese on grilled buns, done on a Blackstone griddle.
My wife makes a Chipolte/red pepper mayo that really sets these off.

For the appetizer, some thick cut bacon with a prime rib rub that was cherry wood smoked.

And we tried a couple of the regular menu items since it was a Monday.
