My Traeger Pro 34 never varies more than +/- 5 degs after crankin' it up initially.

Yup. Traeger has the set the temp feature on some but none have the direct flame option. My future grill will be the Fast Eddie's Cook Shack stainless pellet smoker / grill. Direct flame searing / grilling, roast, bake, smoke and cold smoke all in one unit.
