SteveMy daughter had some deer back straps given to her. She asked me to ask you all how best to prepare/cook them.
There's a dry rub for beef that I buy at the grocery. Has a funny, foreign (greek maybe) sounding name that I can never remember. It comes in a black and red, squarish metal can similar to what you'd buy black pepper in. Sprinkle generously and grill to medium or medium rare. I'd much rather use some 16awg or a little bigger steel that way there is equal pressure across the whole area lol that thin gasket might bend enough to let it leak
