I'm not an expert but I'd probably use a couple of coats of Linseed oil followed by a Spar Varnish coating.
Try it on a scrap piece first.

looks like my homemade concoction, but has UV protection in it. Supposed to handle foot traffic.

matt next time use the back of a spoon and just lightly wipe the mustard on each side then coat in your breading. This should make your breading not so thick.
