First try at black walnut syrup.

We tapped 10 trees the day before yesterday. Pulled off 6 gallons of sap.

It boiled down to a little over a pint.

Tastes like maple syrup, maybe with a slight nutty flavor.

Pretty simple to make, all I did was boil it (no stirring). I set my alarm temp probe to alarm at 219F and pulled it off to cool.

Might have to try some sometime, cut some Osage orange yesterday --- whole bunch of SAP flowing, was surprised.

I only have some Kroger brand maple syrup to compare, but its about the same viscosity.

If I tap the tree how long can the sap sit before boiling?

Wow never heard of doing that. Any concern for the juglone toxin that is released by Black Walnut? I've heard it's not even good to cook over but it could be an old wives tale. I had a large BW by one end of a garden one year and it was amazing to see the progression of slower growth of the veggies that were close to it's root system.

We read up on the Juglone (5-hydroxy-1,4-naphtoquinone) toxin. While the reports seemed inconclusive, we took an additional step of allowing the sap to sit under a U-V flood lamp for 24hrs. It's reported that U-V light neutralizes the toxin.

On a similar note, the Safrole in Sassafras tea is labeled as toxic. I do enjoy it on a cold January morning.
