A couple of Ribeyes just off of the grill and ready to be cut up for steak Fajitas.

Sliced and ready for Tortillas. This is cooked perfect for me but I throw some in with the peppers and onion for my wife. She's likes hers a bit more well done.

The sides are starting to get a nice color to them after a couple of 3 hour smokes, Might do 3 more hours tomorrow and try a couple slices.

The Traeger Pro 34 seems to be spot on temp-wise. Gonna do a few Boston Butts this wknd...daughter and a roomie coming home for the wknd, be some good groceries, then I'm gonna pull an entire Butt apart for those gals to take back with them...they'll have plenty of sammies for a few days to snack on.

Not sure yet, maybe a couple more 3 hour smokes. That tube puts out more smoke than I thought it would, esp. in that small smoker.

Yeh, been saving a little jingle on the side and finally got the new Traeger Pro 34.

Ain't felt worth a chit the last couple of days. Had the outpatient surgery on my neck last Thurs, guess I caught a damn bug while doing that. Neck's fine though. Ran a fever day before yesterday and yesterday as well...but the appetite is back. Got ten hotdogs on the Traeger...itching for a good ol' chili/cheese and slaw dog. Just letting 'em run on the lowest Smoke setting...then crank 'em up to about 225...see how these bad boys turn out shortly.
