Hey you guys serious question here.
Do any of you put some of ur brines or marinade juice into the steam pot with your chips n water?
that's been a religious thing for me and a few other smoker ppl that have the fancy propane and electronic smokers think I'm crazy for doing that but I also only use wood no charcoal or pellets

I've soaked hickory chips in beer......

I haven't tried that but il keep that in mind. so you plan on making a rotating rack option for you smoker being you could fit a whole hog in it? 1 day il have big heavy beast like yours

Probably not. The way the upper shelf is welded in would be a pain in the ass to remove. Looking back, I wish I would have made it removable.

Well Jason, I'm gonna be cooking a pig for about 40 of our brothers & sisters in a few days. I figure I should learn this smoker as well as humanly possible so I don't embarrass myself.
I can't wait. Ought to be a great time as well as a feast


I'm smoking thanksgiving turkey and 8 chicken leg quarters tomorrow.

I've never done it. My concern would be bacterial contamination.

I really love the sweet rum taste next time I may go 50/50 on rum and ad some whiskey but I am very happy with what I did taste tonight. Can't wait till my bacon slab is ready after 7 days in the brine mix.

I'm gonna cook the pig on Friday.......that way I'll have all day Saturday to shoot the chit. :)

I was looking forward to getting to know you better......but we got next year.
Good idea...low and steady temp on the hog for Friday...feed it heat throughout the nighttime for Sat...hog will keep itself, hide will ensure that. It'll be pull apart for the right sections and slice fine for others. You'll do fine Randy on that hawg, and yessir, I'll miss meeting you and sitting around talking about stuff. As well as rubbing shoulders with everyone else.

And absolutely, next year barring anything happening here with my family...I will absolutely be there next year brother.

I'm gonna really miss this shindig!!

If the steam pot or water bowl can get to temp to cook off the bacteria of the brine that's had raw meat, be fine coupled with the heat of the grill. Low and slow smoking under about 220 degrees or so, I'd replace the mixture with fresh juice...apple cider vinegar/white distilled vinegar and apple juice and water. If nothing else simple water replacement with a damn good shot of salt and pepper will suffice.

Did our ham tonight, nothing fancy, pumpkin pie spices, pepper, ground mustard, and brown sugar rub then 4 hours @150.

Pic of the finished half chickens and the legs...all got nailed quick!! I did manage a couple of legs but my daughter and brother made quick work of the half chickens. Glad it got knocked down and gone...the Char-Broil cooker got it sone again. If on the fence, buy this thing. It's worth the few coins.

On a side note...my 18-yr old daughter been working a deal with my brother in the shop...she's got two Stihl saws of mine, 034 and a 024 of mine sold already...for $300 bucks for both...WTF?? Brothers got cash and done put the cash in her pocket. She says she needs her nails/brows done. I told her I gotta Dremel tool for that *s-word!! Now I gotta get my brother drunk enough so I can get my own damn saws back, ain't that some *s-word??

They ain't coming here no more...damn this!! Lol

Getting ready to throw a ham and turkey on the treager for the festivities tomorrow. Will smoke for 10/12 hours...then crack it up on high to get it up to temp.

No doubt in my mind...camper be gone too..Lmao!! This crew gotta go...I'll wake up to nuthin' tomorrow if I don't boot'em now. They're killing me, lol.

Steve, ran the same seasoning...half the bird was Fiesta Chicken Rub and the other was Lemon & Pepper seasoning. Turned out fine again...ain't nothing left to clean up, it all got ate. Good news for the kitchen cleaner and scrubber...that be me.
