Just picked up a 23 pound brisket this morning that I need to cook Friday night for Saturday afternoon family party. I would have preferred a 15-18 pound one but this is the one that had the best bend and looked the best.
My Costco has had some big uns like that lately. Prime grade too. I'm running low on tallow so I need to pop on one of those or a SRF one soon.

I’ve been seeing posts on Reddit of srf brisket at Sam’s Club. I didn’t get that lucky today. I found out we will eat around 2 on Saturday so now I need to start my planning for when to start this beast.

What kind of a person doesn't like, __________ wrapped in bacon? I've done those with fresh jalapenos but it kind of looks like you pre-roasted the peppers before wrapping them. I can see the virtue of pre-roasting because with the fresh jalapeno the bacon will be cooked but the pepper is still a bit raw-ish.

Side note: Years back when I was briefly living and working near Ukiah we could go to the Grocery Outlet and buy "irregular bacon"--basically all the pieces that weren't perfect strips. The price was right!

But, YES pork ribs/loin is a thing here. :thumbsup:
We call it "Carsko", rough translation "Ceasar meat".
We just mostly BBQ it in slices, with &/or without the ribs.

Yeh, peppers are tough if you don't lightly roast them for a bit. I split them, clean them out and put them in the air fryer at 180 degrees for 1 1/2 to 2 hours. I've seen packages of stuffed and wrapped raw peppers "ready to cook" at the store. No way someone buys those twice.

I know I've hit my limit when I can feel my face and inner ear tingling--it's happened a few times.
I hit my limit when I loose the ability to speak (for hours) & drool/sweat/cry like its the end of the world! 😅

Anything less is just "Yeah, its kinda hot!".

My head and face sweats- literally looks like I held the top of my head under a sprinkler
My wife always laughs and shakes her head. I dont go to far anymore because I always pay for it when it all comes out the other end all @ once very rapidly

I know I can eat 100-300k SHU, no sweat.
Under 100k SHU I can eat pure like candy.

Above that it becomes blurry and the exit route tends to be less pleasant.
