Have some spare ribs and Mac and cheese slated to hit the smoker this afternoon. Need to figure out how to trim spare ribs since I havent done it before but the YouTube has made it look fairly simple.

Thanks Ryan. It was very good. Seasoned with meat church Texas sugar and used Traeger apricot bbq sauce. Since buying the pellet grill it’s been about every other week I’ve smoked something. We are enjoying the Pitboss. I’m trying to figure out how many ribs I can do at one time since I’d like to have my parents and the in-laws over for a Sunday bbq. If anyone has used a rib rack on a pellet grill I’d like to hear about it.

Tried these for the first time today. They’re called smoked shotgun shells.
We sliced them into quarters and served as appetizers. They didn’t suck.

Have you tried adding a layer of Italian sausage to the outsides b4 the bacon.
Sausage needs to be fresh to get a good wrap, here it was a couple of days old from the butcher.

When I do my poppers I brown some sausage mix it with a flavored cream cheese. Cut the jalapeños in half clean them out then spread the sausage cream cheese mix in the half and lay a piece of bacon on top. Seems to work as people eat them like crazy. A good friend taught me this method.

Our first batch of the year today.

This batch today consumed the peppers, 2 lbs. of Italian mild sausage, 2 lbs. of thick cut apple smoked bacon, 7 stuffed with a chesse/with garlic pieces, and 3 with philly cheese. Just shy of 1 lb of cheese total. They were tasty.
