Really simple.

Shredded chicken breast
Rotel diced tomatoes with chilies
Minced clove of garlic
Finely chopped onion
Salt
Black and red pepper
Chimichanga cheese
Tortillas

Boil the chicken till it shreds easily. Mix in tomatoes, garlic, onions, salt, pepper. Simmer for 15 minutes or so. Spoon mixture into torts along with a generous sprinkle of cheese. Grill till browned and a little crisp.

Serve with refried beans, chips, and salsa.....

Just not in the mood this evening to get in the kitchen or cookpot. Just finished three bowls of cereal...two bowls of frosted, shredded mini-wheat, and a bowl of corn flakes. I'm sure I'll do some snacking later on a plate of grapes, strawberries, and Gouda cheese.
