Hmm, 14 days to cure, 4 to 6 days to rest in fridge, Then to the cold smoker for 4 hours, rest for 24 hours, back to the cold smoke for 4 hours, back to the fridge for 24 hours, then back to the cold smoke for 4 hours, then back to the fridge again for 24 hours. then repeat again!! ( until you get the right amount of smoke ) ie. many weeks!

See you're in Alabama...we used to beat the breaks off the crappie at Eufala yrs ago. After a three/four day wknd, we'd haul 6-8 100qt coolers slam full, back to mid-Ga...nothing but slabs!

I got some local spots that you can catch them all day long when the timing is right. Hoping my little girl will be big enough next year to go help me catch a lot.

Couple plates of leftovers from Thursday. Fresh Oysters from the Chesapeake bay, plus fresh Scallops, Turkey, two kinds of stuffing , sweet potatoes, corn pudding, Rolls, And Mamas cheese beans. Plus the other trimmings. with gravy. ( Hmmm! )
