It was started after the war when the despression and ration books where in place all the good meat had to be surrendered too the war Agg committee so all the rubbish bits got used for this ,and the barley all the large grains went for seed and the smalller grains fed the people and animals
I love them , it’s similar to a Scottish haggis but better

Basicly the stomach pipes filled with all the leftovers from a pig carcass and mixed with groats or small barley , dashed with plenty of black pepper
