Got up, had coffee and then he morning got away from me with chores so late breakfast/lunch/early dinner. Local restaurant that used to be around had a breakfast concoction called the country boy and it was my favorite. They're gone so i make my own. Its layered in this order: biscuits, gravy, cheese, scrambled egg, gravy, cheese, chorizo sausage/hashbrown mix, gravy and cheese. The chorizo sausage gives it a nice level of heat.

Redneck pot roast, or boef bourguinon if that's how you swing.
sadly, i failed to photo the finished product, but it was delicious. Chuck roast braised with onions, carrots, garlic, ham/chicken stock, tomatoes and white wine because i didnt have any red. Served with boiled potatoes and zucchini sauteed with shallots and yellow and red bell peppers.
