My oil is the Koroneiki variety. I blend in a few wild olives to help with acidity and give it some bite. The wild olives are good for health.

( Choice is usually a semi-random grab of "extra virgin" in the grocery store )
A tablespoon~ish might go in the grits sometimes (butter is still classic there though!)
Have put a bit in the skillet for scrambled eggs to help with sticking.
But that's about it.

Couldn't have said it better....Simply the best olive oil I've ever used. Period.
We basically bathe in the stuff given the quantities we harvest. Lol. I probably average 150-200 gallons of extra virgin per harvest year. We use it for salads and cooking. It’s my philosophy that a little oil and lemon will make darned near anything taste good.
A good salad dressing from oil/lemon or oil/vinegar is unbeatable. Take a baby food jar and fill about half full with oil. Add lemon until the jar is 2/3 full. Add a pinch of salt, pepper and 1/2 teaspoon of minced or grated garlic. Cap it shake the chit out of it. Pour a little of that over salad, baked potato, grilled fish, broccoli, cauliflower, collards, spinach , etc.
