Turned out ok should have been a Lil less crispy but my family like crunchy bacon. more maple and maybe some whiskey next time. first try with bacon was not a failure so I'm happy

Local butcher or Asian market's are a good place to get pork belly I got half a hog for 165 so that's how I got mine

You probably already know this, but for a large amount of bacon, using the oven is very convenient. Throw it on a cookie sheet, toss it in at 350-375 and keep an eye on it. Cooks very evenly and doesn't take any burners. Much easier not to burn it than in a pan.
