You should get a small bowl. Toss with a little @AlfA01 oil and salt and pepper. Drop the heat immediately after you put them on skin side down. Crisp that and then flip to meat side down and let them cook. Handle them however you want after that I toss in sauce and caramelize a bit but the hot outside is the key IMO.Burning a couple of chicken thighs. These are Duratec style. Damn thickkk.
