Greek Easter started at midnight. I had the lamb skewered and ready to hit the coals by 8:30 this morning. Gonna cook it for about 4-4.5 hours on the open pit.

I'm sure the open pit can be challenging with a little wind. Can you lower it if you get short on time?Thanks DJ. I had to throw some wind blocks up to keep the heat under it. Darn thing won't cook otherwise.

I've never had lamb. My neighbor raises them and sells most during Ramadan.You can lower it. I usually lower it for the last 30 minutes. Makes the skin nice and crispy.
