Greek Easter started at midnight. I had the lamb skewered and ready to hit the coals by 8:30 this morning. Gonna cook it for about 4-4.5 hours on the open pit.

I'm sure the open pit can be challenging with a little wind. Can you lower it if you get short on time?

You can lower it. I usually lower it for the last 30 minutes. Makes the skin nice and crispy.
