I like to cook steaks in the wood stove in the winter, get a good bed of orange coals, lightly salt both sides, throw on coals. After a few minutes lift until coal don't want to stick, and flip it. Few minutes on the other side, let it rest on a plate. You won't ever have a better steak.Does pickle juice and Weber Kickin Chicken for 12 hours count as a brine?
I like to use pickle juice as a tenderizer/brine.

Now if I want a steak, it just gets HEAVY salt and pepper, sits in the fridge for a few hours, then brought up to room temp before going on a HOT grill.
Don't sautee the onions this way! Lol
