How'd it turn out, Tim? I used to make a good chili from elk meat when I lived out west. I was thinking of trying a batch with wild boar this winter.
It's always great Dan. I love deer with chili. I told the GF last night that I've probably made it 50 times, and it's never quite the same. No recipes here. I'm going to piss off some peeps admitting this, but I use diced backstrap in my chili. My second favorite protein to use is smoked pulled pork, so I bet some smoked boar would be excellent. I still haven't made the rabbit stifado yet, but there are a fùckton of rabbits here this year so it's coming soon. Probably once the snow flies.
