Brined it over night. Brine was salt, peppercorns, sugar, celery tops, rosemary, onions in water - bring to boil and hold for 5 mins. Cool. Insert bird.

Smoked a pork shoulder and 18 bacon wrapped jalapeño poppers yesterday. Coleslaw, cornbread muffins, watermelon...and peach pie for dessert. Didn't get a picture of the peach pie before it was devoured.
