Don't grind inside the bore.
Use stock jug and piston.
I don't have a problem taking the jug to a machine shop. Do you guys have them just mill of the top of the head and thats it? How much do they usually take off?

check squish to see if it can be run gasketless.

This was my next suggestion.

But be sure to use a good sealant on the bare case/cylinder.
Only a few products I'd recommend and a lot of guys will stand behind me on this...
Loctite 518 / Permatex 51813
Yamabond 4 / Threebond 1194

I've used Motoseal and regular ole black rtv. It held up for 2 or 3 years on one saw. I replaced it with motoseal when I had the saw apart.

I have a 60dl NIB STIHL square ground chain here, but they be some hard azz toofs

I read most of it, way beyond me and I'm not afraid to say so haha. I messaged mastermind and asked how much for him to build it if he would. I am kind of thinking of doing the whole saw restoration as far as top cover goes as i think mine has a crack in it.

How much can i have milled off the bottom of the top of the cylinder head so i can get more compression? I have done that on my 2 stroke older 80's dirtbikes with a great turn out. Will that work on a saw?

No
Your bike cylinder has a removable head. A saw cylinder is one piece.

First thing you need to do is measure squish.

No
The squish band is at the top around the perimeter of the combustion chamber.
If you pull the gasket without measuring the clearance, he piston could slap the combustion chamber if you don't have sufficient clearance.
In your case, I wouldn't shoot for anything less than 0.018"

Measure squish.
Measure base gasket thickness.

Subtract gasket thickness from squish measurement.

Example:
Squish measures 0.039"
Gasket measures 0.020"

Removing the gasket you'd be left with 0.019" clearance. This is an acceptable amount of clearance.

Any less than 0.017" and Id be looking to have machine work done. Any more than 0.025"....machine work.
Again, these are just my parameters that's I've collected thoughout my years as a forum member.

To get a good grasp on everything and before you start tearing into your saw, I think you should hang out for a while and read some more......ask more questions. Take part in a few more threads.
Good bunch of guys here, some have forgotten more than I'll ever learn.

I read a thread about doing a Husqvarna 272 piston/cylinder/carb swap. Will this end up being better than just milling?
