Our family and friends get together first weekend in October and make molasses. Some call it sourgham or sugar cane. I hope to document this event this year and share how we do it for those that don't know.

So, from the juice that's pressed from the stalks, how much needs to be cooked off? In other words, if you press 100 gallons of juice, how much molasses do you end up with?

Cool pictures, by the way. I'd love to check out an operation like that sometime. Thanks for sharing!

The ratio works out to about 8 to 9 gallons of juice to 1 gallon of syrup. We had roughly 80 gallons yesterday. It was on the fire for by 10am and came off after 10 pm. The pan only holds 60 gallons, so as it cooks down, we were adding more. Had trouble with the fire as the wood was wet from rain the day before.
