Thanks. First time think I'll do half a block sweet and half savory. It's surprising how much quicker the smoke gets in to things other than chicken, beef or pork. One of my favorites is lobster tail. In the 7 minutes it takes to cook a lot of smoke flavor gets in.
I've been known to cheat and smoke something for a couple hours and then wrap it to finish in the oven. It's not the same but any smoke is better than no smoke.

I do that sometimes. Figure it won't get hardly any smoke wrapped so what's the difference. My little smoker doesn't have any automatic temp controls and can get finnicky after a couple of hours.

I use the mid-sized Weber Smokey Mountain and it's pretty good at maintaining temperature unless the wind picks up.

I use the mid-sized Weber Smokey Mountain and it's pretty good at maintaining temperature unless the wind picks up.
Mine is the little Chargriller Akorn Jr. It's got a lot of cooks on it so I'm thinking the lid seal is spent and leaks air. Won't "hold a tune" like it used to.

Middle front, black pan - that looks very yummy!!!

The 6-gal stainless pot is on stove for free hot water and as a humidifier. Wood heat is dry, dry, dry,...... I can get the skillet and two pots cooking on the stove even with that in place. I'll start stuff in advance like potatoes/carrots before I cook the rest of the meal.

Stuff in the skillet is onions and peppers saute in the rib juices.

I do breakfast on the wood stove too. Eggs and hot water for coffee.

Flat is hitting mid 180s now. I think the plan is going to be wrap it when it’s about 200 and then hot hold it on the smoker at 160 until 11 am then in the cooler until 2 when it will get cut. I’ll be sure to posts my results when the time comes.
You are way more scientific than me. I need to step up my game.

No need for that Thomas. I’m just a backyard cook who writes nothing down and just wings his cooks.
Eventually I started writing a few things down and now I have a couple pretty reliable recipes. Mostly I got tired of ending up with something delicious and then being unable to recreate it. Was that a teaspoon of chili powder or 2 teaspoons?
