Take it off at 165-170 and put it in a tray like the one under it. Put some butter and brown sugar on top and cover it in foil. Cook to 203-205 at what ever temp you want. SubbedSmoker is heating up while I eat breakfast. The wife went to watch her sisters kids today so I made sausage gravy bombs and brought them over to her for breakfast. Now I’m getting ready to babe this smoked strawberry shortcake for dessert tonight as we will celebrate Christmas with my niece and nephew who came home last night from Christmas with their dad.
